Chitinase B from Serratia marcescens with a pentamer of N-acetylglucosamine (green) bound in the active site cleft (PDB accession code 1E6N). The part coloured red is a surface meander (residues 2301265) whose unfolding may contribute to the thermal inactivation of this enzyme.
